Carnitas

This recipe is paleo, gluten free and keto if you leave off the tortillas. I have changed up a little what she suggests. If you want to see the original version I found its on my Pinterest “Food and Drinks” board or at this link. https://pin.it/vyd6u6t26gzgwt.

4 lbs carnitas meat—trim the fat and cube (I can’t always find carnitas meat, so I use pork roast instead)

1 onion peeled and halved (just put the halves in the pot)

Spent halves of 1 juiced orange (yes, put these in the pot)

2 Tablespoons lime juice

1 tsp ground cumin

Salt and pepper to taste (I use about 1 Tablespoon of each)

2 bay leaves (whole)

2 cups water

2 teaspoons crushed oregano

The cooking method is where my recipe differs from the original although I’ve made them both ways and both are fabulous. It just really depends on how much time you have.

I cook mine the crockpot for 4-6 hours on high or low depending on how soon you need it to be done. When meat is falling apart tender, remove the meat from the pot, shred it, put it in another container and add about 1 cup of the liquid to it. Throw everything else away.

The original recipe calls for you to combine everything in a Dutch oven, bring it to a boil and then transfer to a 300 degree oven for 2 hours.

You can do the following with either cooking method if you want.

  1. Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan. Remove and discard everything from the pot except for the cooking liquid. Place pot over high heat on the stove and boil until it thickens and syrupy, about 20 – 30 minutes. You should have about 1 C of liquid remaining when it is finished.
  2. While the liquid is reducing, use two forks to pull each cube of pork into three equal sized pieces. Once the liquid has reduced, gently fold in the pieces of pork into the pot. Try not to break up the pork any further. Taste and add additional salt and pepper.
  3. Spread the pork back onto the foil lined pan and evenly spread the meat around so there is a single layer of meat. Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp, about 5 to 8 minutes. Using a wide metal spatula, flip the pieces of meat and broil the other side until well browned and edges are slightly crisp, 5 to 8 minutes. 

Either method you use is going to result in a great carnitas meal. You can add your favorite toppings to either make burritos or soft tacos in warm tortillas. Enjoy. http://Www.westtxwoman.com/snickers-and-dr-pepper/
