KETO by Karen McDonald

I want to share my experience recently starting the Keto diet.  This last year I had easily put on 10 to 15 pounds.  My husband retired and we have been blessed by being able to travel and enjoy this time in our lives.  Unfortunately with the travel came weight gain!  Oh yes,we had some great times but the pounds made me miserable.

I went to see my doctor for my annual checkup and my weight shocked me as well as the fact that my blood sugar was elevated.  I decided I had to do something.  A friend had shared with me about the Keto diet and I thought, “Wow, I can do that.”  I am a carb lover so I knew that this was going to be a challenge but I was up for it!

I purchased a book about the diet and and it suggested keeping your carbs below 30 a day!  Not an easy task for a carb lover!  I really struggled the first week of the diet as my body was adjusting to the low carbs.  I had very low energy as my body adjusted.  After the first week I started being more energetic.  If you are going to do this, plan for a tough start if you are a carb lover but stick with it!  This diet stressed eating the good fats.  I use coconut oil, olive oil and butter.  I have noticed that all of the low fat foods I would buy previously have more carbs.  When they take the fat out they add sugar.  Imagine that!  I stopped looking at calorie counts and concentrated on carb count.

I also started intermittent fasting.  I would eat my last meal of the day by 7 in the evening.  I would not have anything else to eat until lunch time.   This has become a recent trend in diet.  I have always heard that we need three meals a day.  That became popular in the agricultural age when farmers were working so hard they needed that to fuel their bodies.  Also, I am not diabetic so that was not a concern.  I know diabetics need to eat more often to control their blood sugar so intermittent fasting is not possible.

I ate pizza last night with my family.  I picked up a chicken Caesar salad to go with it.  I ate the salad with no croutons.  I also had two slices of pizza.  I simply ate the top of the pizza and left the crust.  That made our dog Molly pretty happy as she got some scraps.  I have found it very easy to eat out on this diet.  If I have a hamburger I toss the bread and eat the meat and vegetables.  I order tacos and burritos naked (without the tortilla).  I eat a lot of salads with beef or chicken.  Unfortunately I am not a fan of seafood which is so good for our bodies!

The success of my story is that I am now down 12 pounds.  I lost it just before Christmas and have maintained my weight loss through the holidays.  I do not know if this diet will help anyone reading this but it has worked for me.  I wish everyone success in whatever diet works for you to keep your body healthy as God has only given us this one body and we need to take care of it!  God Bless!

So whether you eat or drink or whatever you do, do it all for the glory of God. 1 Corinthians 10:31

Let me know what you think.
