Omelette in a Bag

Omelette in a Bag

Boil about 2-3 cups of water in a pan on stovetop..
Put 2 beaten eggs in a quart size ziplock freezer bag
Add about 1/4 C cheese (I use reduced fat), spinach, mushrooms, tomatoes, or whatever you like.
Zip the bag with as little air in it as possible.
Drop the bag into boiling water for 11-12 minutes, depending on whether you want your eggs runny or firm.
Remove from boiling water with tongs, carefully empty bag onto plate and enjoy.
Bonus, no pots or pans to wash.
